Fish In Tomato Sauce

Are you tired of eating tomatoes raw, but want them fresher than in a slow-cooked sauce? This recipe is perfect for late summer! Fresh tomatoes simmered with garlic and herbs make this a perfect lighter selection for a late night meal.

Serves: 4


2 Tbsp. Olive oil

2 Garlic cloves, minced

¼ Tsp. Red pepper flakes

1 ½ Lb Ripe tomatoes (about 5 medium), cut into 1-inch pieces

3 Cups Water

1 Tbsp. Chopped fresh oregano leaves

1 Tbsp. Chopped fresh thyme leaves

Kosher salt

Freshly ground pepper to taste

1 ½ Lbs. Red basa or tilapia fillets. Cut them into 4 pieces.


  1. Heat the oil in a deep skillet over medium heat until it shines or shimmers. Add garlic, red pepper flakes and cook (sauté) until the garlic begins to turn golden brown, around 10 seconds.
  2. Add water, tomatoes, oregano and thyme and bring to a boil. Cover and simmer for 15 minutes. Take out the lid, lower the heat to medium and simmer for additional 8 to 10 minutes to thicken the sauce. Season with salt and pepper as desired.
  3. Return the fish to the pan, season with salt, cover and cook for another 7 to 9 minutes or until the fish becomes tender.
  4. Put a piece of fish with sauce in 4 separate bowls.
  5. Serve immediately.
