Fish In Tomato Sauce
Are you tired of eating tomatoes raw, but want them fresher than in a slow-cooked sauce? This recipe is perfect for late summer! Fresh tomatoes simmered with garlic and herbs make this a perfect lighter selection for a late night meal.
2 Tbsp. Olive oil
2 Garlic cloves, minced
¼ Tsp. Red pepper flakes
1 ½ Lb Ripe tomatoes (about 5 medium), cut into 1-inch pieces
3 Cups Water
1 Tbsp. Chopped fresh oregano leaves
1 Tbsp. Chopped fresh thyme leaves
Freshly ground pepper to taste
1 ½ Lbs. Red basa or tilapia fillets. Cut them into 4 pieces.
- Heat the oil in a deep skillet over medium heat until it shines or shimmers. Add garlic, red pepper flakes and cook (sauté) until the garlic begins to turn golden brown, around 10 seconds.
- Add water, tomatoes, oregano and thyme and bring to a boil. Cover and simmer for 15 minutes. Take out the lid, lower the heat to medium and simmer for additional 8 to 10 minutes to thicken the sauce. Season with salt and pepper as desired.
- Return the fish to the pan, season with salt, cover and cook for another 7 to 9 minutes or until the fish becomes tender.
- Put a piece of fish with sauce in 4 separate bowls.
- Serve immediately.
