Rainbow Fruit Salad
Enjoy this healthy and yummy salad recipe – it contains all the colors of the rainbow, and offers much more than any regular type of salad.
Serves: 4 to 6
Ingredients
2 Tbsp. Freshly squeezed lime juice (about 1 lime)
2 Tbsp. Honey
1 Tbsp. Mint leaves, freshly chopped
1 Small Rainbow radish, very thinly sliced
1 Avocado, sliced into 1/8 inch slices
1 Cup Broccoli. ½ inch florets
1 Cup Quinoa, cooked.
Instructions
- In a medium size bowl, mix the lime juice and honey until fully blended. Add in all the vegetables and fold together.
- Toss gently until fully combined. Garnish with mint and serve.
