Tomato and Feta Salad
Nothing better than a meal which comes together in minutes, especially on busy weekdays. Depending on the occasion, this delicious gluten-free recipe can be used as a main or side dish. You’re free to pair with grilled meat or fish. Either way you want to enjoy it, it is definitely a summer dish.
Serves: 2 to 4
2 Tbsp. Olive oil
1 Tbsp. Red wine vinegar
1 Tsp. Minced shallot
Pinch kosher salt
Pinch freshly ground black pepper
1 Pint Cherry or grape tomatoes (about 2 cups), halved
3 Oz. Feta cheese, crumbled (about 1 cup)
¼ Cup Coarsely chopped fresh parsley leaves
2 Tbsp. Chopped fresh oregano leaves
3 Cups mixed greens
½ Cup cucumber, ¼ inch sliced
1 Small red onion, thinly sliced
- Whisk together the oil, vinegar, shallots and a generous pinch of salt and pepper in a large bowl. Add the mixed greens, cucumber, red onion, parsley and tomatoes.
- Garnish with feta and oregano.
- Season with more salt and pepper as needed.
